- 1big potato
- 1carrot
- 4beans
- 1/2cup peas
- 1onion
- 1tomato
- 1tsp red chilli powder
- 1tsp dhaniya powder
- 1tsp garam masala powder
- 1/2cup grated dry coconut
- 1/2cup khus khus
- 6 cashew nuts
- 1/2tsp mustard seeds
- 1/2tsp cumin seeds
- pinch turmeric
- 8curry leaves
- oil
Preparation:
- peel off the outer layer of potato,carrot and cut into small pieces. cut beans also into small pieces. and onion cut into long slices,tomato also into small pieces.
- take a pan,add 4tsp of oil,add mustard seeds,cumin seeds,curry leaves,onion pieces,saute it well.. when onion turn golden brown then add all vegetable pieces and fry for 5min,
- in the mean time make masala paste by putting,grated coconut,cashew nuts,khus khus,1green chilli in a blender,blend and make like a fine paste.
- add this paste to fried vegetables,add turmeric,fry for another 5min,until the raw smell of paste goes out.
- then add red chilli,coriander powder,salt and add 1cup of water cook it for 10min.
- when all the vegetables get cooked well add garam masala powder,cook for 2min then switch off the stove.
- vegetable kurma is ready to eat.
- it can be taken with rice and chapati.
